Spinach Rice(Palak masala chawal )

Ingredients:

  • one bunch of spinach leaves ,chopped cleaned and make Puree
  • 2 cups Basmati Rice (cooked)
  • 1 big onion chopped
  • 3 green chilies or less or more depending upon your spice level
  • 2 tsp ginger garlic paste
  • Few strands of cinnamon sticks
  • 3 or 4 cloves
  • 2 cardamom slightly mashed
  • pinch of turmeric powder
  • 1 bay leave
  • 1/2 spoon garam masala powder
  • 2 Tbsp cooking oil
  • Salt to taste

Recipe:

In a pan, add oil let it heat next add bay leaf,green chilies,cinnamon stick,clove, chopped onion and (ginger+garlic) paste . Once they color change add spinach puree.Next add the cardamom powder/masked and the dry masala(turmeric and garam masala),salt to taste. Saute till spinach is well cooked; allow the whole paste to boil. Switch off the flame and mix this paste with already cooked basmati rice. Mix well so that every rice is covered with spinach masala. Cover with a lid for 1 min and serve hot.
