Eggless mango cake

Ingredients:

  • 1 cup flour
  • 2/3 cup sugar
  • 1/2 cup fresh cream
  • 1 tsp butter (for greasing dish)
  • 1 1/2 tsp baking powder
  • 8 tbsp yogurt @room temperature OR (2 eggs)
  • 2 large mangoes

Recipe:

Grease microwave proof dish & keep aside. Extract pulp from mangoes and put in large mixing bowl.Add sugar & cream to pulp and beat well with electric beater Add Yogurt or eggs to mixture & beat well. Add flour and baking powder and mix together till all ingredients are combined well. Pour mixture into greased dish. Microwave on high for 10 mins.Check if done. If not then, microwave again for 2 mins. Take out and allow to cool. serve with vanilla ice cream (here chocolate syrup and dry strawberry is used)
