Eggplant fry

Ingredients:

  • eggplant 6 pcs small size
  • Green chili 1-2
  • 2-3 cloves of garlic cut and chopped
  • Oil 2 tbsp
  • Cumin seeds ½ tsp
  • Asafoetida a pinch
  • Turmeric powder ½ tsp
  • red chili powder ½ tsp
  • Salt to taste
  • coriander powder 1 tsp
  • sliced tomatoes 2 large
  • 1 medium size onion sliced
  • Chopped coriander leaves 2 tbsp

Recipe:

Cut eggplants length wise removing the top and put them in a bowl full of water.Next in a pan add oil heat add the asafoetida, cumin seed, green chilies slit, cut and chopped garlic,onion sliced.Fry till it changes its color, add the eggplants with all the dry masala powder mentioned above, salt to taste. Add the tomatoes, lower the flame cover with a lid and cook for 5-8 mins stir in between. Check for the tomatoes and eggplant to be done.Turn off the heat and garnish the curry with chopped coriander leaves.
