Ingredients:
- 1 eggplant - 3 inches in diameter, cut into 4 half-inch thick slices(immediately apply oil and season some salt)
- 3 teaspoons olive oil
- 1/2 teaspoon salt
- 1/8 teaspoon ground black pepper
- 1/4 cup pasta sauce or ketchup
- 1/2 cup chopped capsicum(red clr is best here may take some green pcs too)
- 1/2 cup chopped tomatoes
- 2 tsp Italian seasoning
- 1/2 cup shredded part-skim mozzarella cheese(may take more, depends on you)
Recipe:
First step is to brush both side of the eggplant sliced and arrange on a baking tray and bake in a oven @ 425 degrees F until browned and almost tender, 6 to 8 minutes, turning once. Meanwhile in a big bowl add both (green n red), olive oil capsicum,salt,pepper,tomatoes and seasoning mix well n leave for a minute. Finally spread 1 tablespoon of pasta sauce or ketchup on each eggplant slice. Top with the veggie mix and shredded cheese. Bake until the cheese melts, 5-6 minutes approx timing. Serve hot.
