- 2 cups desiccated coconut
- 1 cup coarse semolina (rava/Sooji)
- 2 cups Sugar
- 1/2 cup water
- 1 cup clarified butter(Ghee): melted @room temperature
- 1/2 tsp Cardamom powder
- Cashew nuts 5-6 pcs
Recipe:
Dry roast the semolina in a pan for 1 min (medium heat)till it gets slightly heated and change its colour. Keep aside.Heat the ghee(clarified butter)(half quantity) in a pan, roast the desiccated coconut add rava combine until a nice aroma comes out after 3 mins add the remaining ghee(clarified butter) and cardamom powder.Keep on stirring till a min.Transfer the roasted rava and coconut to a plate and let them cool. In the same pan, take sugar cover it with water and bring it to boil,cook until it reaches one string consistency,add immediately the roasted rava,coconut,cardamom powder and cook in simmer until the mixture gets off the vessel.Pour the burfi(fudge) to a greased plate add the cashew (whole) on top,let it cool completely.Slice the burfi as you desire and enjoy.
